Cleansing smoothie: White celery & mango

A new week, a new smoothie!

Celery has a lot of health benefits. Its juice is highly nutritious, very hydrating and has excellent cleansing properties. So I guess we can describe this smoothie as a good inner cleanser :)

~ ~ ~ ~ ~ ~ ~
Ingredients:
(5 glasses)

8 stalks white celery
1 mango
400 ml natural rice drink

~ ~ ~ ~ ~ ~ ~

Peel the mango and clean the celery. Cut everything into pieces and put all together in a blender. Blend blend blend. Done!

To dilute this smoothie I used a natural rice drink or rice milk as it may be called. It has a naturally sweet taste which is due to the natural sugars in the rice.

I topped this smoothie with chia seeds and hemp seed. Two powerful superfoods!

Not as colourful as last week's smoothie, but my mum was very enthousiastic about this one :) The flavour of the celery is quite prevalent what gives this smoothie a refreshing touch. Mmmm ...

What do you think? Have you ever tried rice drink?

Warm veggie winter salad ~ Roasted butternut squash

What a pathetic title for such a yummy dish! Oh well.

Last week, my grandmother joined us for dinner, and I had the previlege to cook! I really love cooking, and especially if it's for more people than just myself. Lately, and partly due to this blog, I've been experimenting more with ingredients too. That's actually the main reasons why I started this blog: being more creative and take more challenges.

If you've been following me for a while, you probably know that since November I started to eat less meat. I wrote a post on that which you can read here. For this recipe I used lentils instead of meat. Lentils are a great substitute for meat since they are rich in protein. Besides that, they also contain high amounts of fiber, iron and vitamins.

~ ~ ~ ~ ~ ~ ~
Ingredients:
(5 servings)

1 butternut squash (1.5 kg)
100 g dried lentils (you can also use 300 g cooked lentils)
100 g quinoa
100 g rucola/rocket
100 g soft goat's cheese
2 handfuls of raisins
Salt and pepper
~ ~ ~ ~ ~ ~ ~

Step 1:
Dried lentils actually don't need pre-soaking, but if you do, it improves their digestibility. So I pre-soaked my lentils for about 1 hour because we all have quite a sensitive digestive system here (yay!).

Step 2:
Preheat the oven to 200°.
Peel your butternut squash (this job is not to be underestimated!), remove the seeds and cut him into chunks. Put some olive oil in a large ovenproof dish and add the pumpkin chunks. Drizzle some olive oil on top and give it a stir. Season with salt and pepper and roast for about 40-45 minutes in the oven.
Stir every now and then while roasting.

Step 3:
Add lentils and water to a saucepan (with a lid) and bring to a boil.

Step 4:
Boil the quinoa. When the quinoa is almost cooked, add the raisins so they can swell and become soft and juicy. Mmmm...

Step 5:
When your butternut squash is roasted and soft, take it out of the oven. Add the lentils, quinoa and raisins, the rucola/rocket and goat's cheese. Mix well and serve right away!

This winter I prepared (and ate) my first butternut squash ever. It is such a delicious vegetable! Seriously, why haven't I discovered it earlier!? And it looks quite pretty too, don't you think?
Oh, and my grandmother really liked this recipe. Score! :)

What do you think? Do you like butternut squash?

Vitamin C smoothie: Pink grapefruit & red pepper

A new week, a new smoothie!

After my little workout yesterday (5 km run) I treated myself with a very healthy smoothie. The beauty of this smoothie is that it only consists of fruits and vegetables, no added sugars nor added dairy products. Just simply mixed vitamins in a glass :)

~ ~ ~ ~ ~ ~ ~
Ingredients:
(5 glasses)

1 orange
1 pink grapefruit
1 red pepper
1 carrot

~ ~ ~ ~ ~ ~ ~

Peel the orange, the pink grapefruit and the carrot. Clean the red pepper. Cut everything into pieces and put all together in a blender. Blend blend blend. Done!

Look at that colour! Doesn't this smoothie look beautiful?!

For some reason I always expect smoothies to taste sweet. This one didn't had that predominant sweet taste, but it had some bitterness as well. My sister was not a fan of the slight bitter taste (caused by the pink grapefruit) but my dad, my mum and I really liked it!

This smoothie is filled with vitamin C and beta-carotene. A very colourful antioxidant drink it is!

Do you expect smoothies to be sweet or do you like some bitterness as well?

London Lush haul!

Hello bloggio! (sorry for that)

I hope you're all having a good week! It's almost weekend, yay! Although not for me, because I have to study for my exams, boo! Still 2 more to go: one on Monday and the other on Thursday.

So today's post will just be a short one in which I'll show you the Lush products that I bought last week when I was on holiday in London.

Before I left for London, I made a list of the products that I really wanted. Normally I always get back home empty handed because I couldn't choose from all the products (yep, story of my life). And then of course I regret not bringing anything! So three cheers for me for making that list!

One thing I really wanted was the Fresh Farmacy cleanser. It's like a pink bar of soap to use on your face. I've been using this every single day from the day I bought it. It does a fantastic job for my skin and leaves it super soft! And oh my goodness, it smells in-cre-di-buuul!

Then I also really wanted one of their gorgeous bars of soap (who can resist those big chuncks of sweet-smelling glory, right). I did some research and this Porridge soap seemed to be perfect for my sensitive skin.

The Angels on Bare Skin is another cleanser for daily use. I actually have to admit that I'd never used a cleanser before. Shame. On. Me. I know! So the reason I bought a second cleanser is 1) I wanted one to use before I go to bed as well; 2) I thought the ingredients (almonds, lavender, chamomile) were very interesting.

And then the last product I bought was the 9 to 5 Cleansing Lotion. Another cleanser, ehem. I've run out of excuses I'm afraid. Let's say this one is just a cleanser to use for days that I'm in a hurry + I can store this one longer than the fresh Angels on Bare Skin cleanser. There you have it :)

That's all for now! I'm planning on doing a little review on every product as soon as they have passed the trial phase. Now back to my books!

Have you recently bought any Lush products? I would really like to know! Maybe you can all link me to your latest Lush posts (so I have an excuse to not have to study, mhihihihi).

Fruity smoothie: Raspberries banana & almond milk

I started the year off with this healthy New Year's smoothie. After this first smoothie trial - which I might say turned out great - I really wanted to incorporate more smoothies into my life.

On Sundays we always have a full breakfast with scrambled eggs, freshly oven-baked buns and peanut butter (for me anyway ... there's no breakfast complete without peanut butter!)

Because on Sundays we always sleep a little longer (till 8:00), we also have breakfast a little later than the rest of the week. This means that at lunchtime we don't have lunch (boo!). But because I'm not that kind of person who can function 8 hours without food, I always like to eat something healthy in between to keep myself going.

Another thing is, that on Sundays I always like to go for a run. Three hours after breakfast is the perfect timing. And since a workout is always accompanied with a healthy post-workout snack, from now on a smoothie on Sunday it is!

~ ~ ~ ~ ~ ~ ~
Ingredients:
(5 glasses)

2 bananas
1 orange
1 small apple
10 frozen raspberries
300 ml almond milk

~ ~ ~ ~ ~ ~ ~

Peel the orange and the bananas. Cut everything into pieces and put all together in a blender. Blend blend blend. Done!

What I like to do - just because I love nuts and seeds that much - is to top my smoothie with some flax seeds and pumpkin seeds. Heaven in a glass!

This smoothie was definitely a winner at my house :)

What do you think? Any suggestions for my Sunday smoothies? They are much appreciated!

Sparkling winter trip to London!

On Sunday, my sister and I took the Eurostar from Brussels to London. I've been there now several times - 7 times I guess - but I always love to go back. England has a special place in my heart (okay, that sounded a little sentimental). Normally we only go on holidays in summertime. But we really couldn't wait that long. And since my exams start next week, and I actually should be studying right now, I was very clever and took my school material along (ehem, haven't touched it).

I had an amazing four days with my sister in London (we even didn't fight, result!). And to give you a little impression of my journey, I selected just a few (of the many) pictures I took.

And when I have some free time besides all that, then I'm trying to study for my exams. Aaargh!

I hope you're all doing well!

New Year's drink: Coconut banana carrot smoothie

Happy 2014 everyone! I hope you've had a magical night!

Today, I decided to start the year with a healthy bang by making myself (and my sister and my parents) a smoothie filled with lots of good stuff. As much as I love smoothies (I'm literally obsessed by them), I've never made my own. So, a new year, a new start ... well, you all know how it goes. And so, here it is ... my first smoothie ever :)

~ ~ ~ ~ ~ ~ ~
Ingredients:
(5 glasses)

2 bananas
1 orange
1 pear
1 kiwi
1 carrot
200 ml coconut milk
~ ~ ~ ~ ~ ~ ~

Peel the carrot, the orange, bananas and kiwi. Cut everything into pieces and put all together in a blender. Blend blend blend. Done!

I have to say, the smoothie made like this is quite thick. So if you prefer your smoothie more liquid, just add more coconut milk. That's what my tasting panel said after all. I thought the consistency was pretty good!

Now I've made my first smoothie ever, there will probably appear more on my blog soon! Yay!

Do you like smoothies? What's your favourite smoothie?

Sofie
